Ingredients

  • 5 large eggs
  • 5 egg whites
  • 1/2 c onion diced
  • 1/2 c bell peppers diced
  • 1 c spinach
  • 1 c broccoli
  • 6 oz ham

Instructions

  1. Preheat oven to 350 degrees
  2. Dice veggies
  3. In mixing bowl, whisk eggs, then stir in veggies
  4. Divide mixture into greased muffin pan (should fill about 10 muffins)
  5. Bake for 18-20 minutes or until firm
