Ingredients
- 5 large eggs
- 5 egg whites
- 1/2 c onion diced
- 1/2 c bell peppers diced
- 1 c spinach
- 1 c broccoli
- 6 oz ham
Instructions
- Preheat oven to 350 degrees
- Dice veggies
- In mixing bowl, whisk eggs, then stir in veggies
- Divide mixture into greased muffin pan (should fill about 10 muffins)
- Bake for 18-20 minutes or until firm
